Papri Chat is utter mouth-watering dish, eaten as appetizer or snack. Prepare this homemade chat specially in iftar and assure, this snack of your table/dastarkhwan would be super-hit by everyone. And you can't help making it minimum twice a week in ramadan on high demand.

Ingredients

  • For Papri:
  • Plain flour 200 gm
  • Clarified butter 2 tbsp
  • Salt ½ tsp
  • For Chat:
  • Yogurt 2 cup (whipped)
  • Milk ¼ cup
  • Sugar 2 tbsp heaped
  • Salt ½ tsp
  • Chili powder ½ tsp
  • Cumin ½ tsp (roasted and crushed)
  • Coriander leaves 2 tbsp
  • Potato 1 (boiled and chopped)
  • Chickpea 1 cup (boiled)
  • Mint and tamarind chatni ½ cup each
  • Sev ½ cup
  • For Tamarind Chatni:
  • Jiggery 200 gm
  • Tamarind 100 gm
  • Cumin seeds 1 tsp
  • Black pepper ½ tsp
  • Dry ginger powder ½ tsp
  • Salt ½ tsp
  • Chili powder ½ tsp
  • Chat masala 1 tsp
  • Red pepper 1 tsp heaped (crushed)
  • For Mint Chatni:
  • Mint leaves 1 bunch
  • Onion 1 (chopped)
  • Salt ½ tsp
  • Green chili 4
  • Yogurt ½ cup
  • Khatai powder ½ tsp
  • Raw mango 1
  • Garlic 1 tsp

Cooking Directions

  1. For Papri: In a bowl mix together flour and salt, mix in clarified butter and knead with a water into stiff dough, leave to rest for 30 minutes.

  2. Roll dough into a large round, cut with biscuit cutter, prick and deep fry light golden and crisp.

  3. When cool use as required.

  4. For Chat: Beat milk and sugar.

  5. Add to it chili powder, salt, cumin powder.

  6. Arrange papris on a serving platter, pour yogurt over it, top with potatoes, chickpea, sev.

  7. Garnish with coriander leaves, tamarind and mint chatni.

  8. For Tamarind Chutni: Soak jiggery and tamarind for half an hour in 2 cups water.

  9. Rub with hand and remove juice.

  10. Cook both together with salt, crushed red pepper, ginger powder, chat masala, chili powder, black pepper and cumin till thick, remove, cool and use.

  11. For Mint Chatni: In a blender put all ingredients and blend till smooth.
