Ingredients

  • Black Gram 1/2 cup
  • Cumin 2 tsp
  • Coriander 2 tsp
  • Dry Red Chillies 4
  • Panchforan 1/2 tsp
  • Black Pepper 1/2 tsp
  • Yogurt 4 cups
  • Oil for deep frying
  • Sugar to taste
  • Salt and Black Salt to taste

Cooking Directions

  1. Roast and grind the cumin, coriander, red chillies and panchforan.

  2. Soak the black lentil overnight.

  3. Wash and clean the lentil until white.

  4. Place the lentil into the cup of mixer and mix with little water until it blends into a smoothe paste.

  5. Drop a dollop of the paste in water, if it floats, it is well done.

  6. Heat oil in a wok. Drop 1 tablespoon of the lentil paste and fry golden brown.

  7. Fry 3-4 fritters in one batch.

  8. Soak the fritters in salted water for 5-7 minutes.

  9. Squeeze the fritters and put in a serving bowl.

  10. Beat the yogurt. Add salt, sugar and the ground spices to taste.

  11. Pour over the fritters.

  12. Keep in the refrigerator for 5-6 hours.

  13. Serve accompanied with tamarind sauce.
