Dajaj Mashori is a middle eastern recipe, whole chicken marinated with a tomato sauce and stuffed with rice and then steam baked is a wonderful entertaining dish to serve your guests.

Ingredients

  • Oil 4-5 tbsp
  • Chicken (mince) 1/2 cup
  • Chicken (whole) (optional with skin) 1
  • Rice (boiled) 1 cup
  • Almond 3 tbsp
  • Raisin 3 tbsp
  • Salt/black pepper to taste
  • Cloves 2-3
  • Black pepper (whole) 6
  • White cumin seeds (Safayd zeera) 1 tsp
  • Green cardamom 3-4
  • Cinnamon stick 2
  • Corriander powder 1/2 tsp
  • Nutmeg 1 pinch
  • Red chilli powder 1 tsp
  • Mace 1 pinch
  • Tomato puree 1 cup
  • Garlic 3 cloves
  • Pistachio 1 cup

Cooking Directions

  1. In a pan roast clove, black pepper, cumin seeds, cardamom and cinnamon.

  2. Then grind these whole spices to make powdered garam masala.

  3. To Make Stuffing: Heat 4-5 tbs oil in a pan, add chopped onion and saute.

  4. Now add mince meat followed by almonds, raisins, pistachio and salt.

  5. Let it cook for few mins then add boiled rice and mix.

  6. After a few minutes take them off flame and put aside.

  7. Add 1/2 tsp of the roasted powdered spices (garam masala) that was made earlier.

  8. In a bowl, add salt, 1-2 tsp of garam masala and red chilli powder.

  9. Also add coriander powder, mace, nutmeg and tomato paste and mix.

  10. Rub this mixture all over the chicken properly .

  11. Stuff the chicken with the mince and rice.

  12. Tie the chicken legs together.

  13. Put the chicken in roasting pan, add oil and 1 cup water in the roasting pan.

  14. Cover the roasting pan with foil and put in the oven to bake .

  15. Roast the chicken in a preheated oven at 250 degrees for 45 minutes until cooked.
