Ingredients

  • Flour 310 gm
  • Yeast 1 tsp
  • Sea salt 1 tsp
  • Nigella seeds ¼ tsp
  • Sugar ½ tsp
  • Cooking oil 2 tbsp
  • Luke warm water 1 to 1-½ cup
  • Cilantro 1 tbsp (chopped)
  • Yogurt 2 tbsp
  • For Stuffing:
  • Potatoes boiled
  • Green chilies
  • Coriander 1 tbsp(chopped)
  • Oil 2 tbsp
  • Ginger 1 inch piece (chopped)
  • Coriander powder 1 tsp
  • Mango powder ½ tsp
  • Red chili powder ½ tsp
  • Garam masala powder ¼ tsp
  • Salt ½ tsp
  • Coriander leaves 1 tbsp
  • For Garlic Butter:
  • Garlic 3-4 clove
  • Butter 50 gm or 2 tbsp (heaped)
  • Green coriander 1 tbsp (chopped)

Cooking Directions

  1. For the Dough:Put all ingredients flour, yeast, sugar, nigella, salt, coriander, oil and yogurt into kneader.

  2. Knead soft dough, grease a bowl with oil put dough and cover damp cloth, and allow to rise 1 hour.

  3. For Garlic butter: in a bowl add chopped garlic, butter and coriander mix well garlic butter is ready.

  4. Stuffing: Heat oil add potato add chilies and all ingredients.

  5. Divide dough into 4 portions roll out little and put potato mixture on the center of dough, make ball.

  6. Now roll out with rolling pin in to a thick small kulcha shape.

  7. Bake for 10 minutes into pre-heated oven at 180 C.

  8. Take out kulcha and spread thick coating of garlic butter wrap into foil to keep kulcha soft and hot serve and enjoy.
