Ingredients

  • Pita bread rounds 4
  • Olive oil 1 tbsp
  • Chicken breast halves 4 (skinless, boneless, chopped)
  • Onion 2 medium (chopped)
  • Garlic clove 1 (minced)
  • Tomato puree 1 can (10.75 oz)
  • Cumin to taste (ground)
  • Salt to taste
  • Black pepper to taste (ground)
  • Butter ½ cup (melted)
  • Yogurt 1 cup
  • Fresh parsley ¼ cup (chopped)

Cooking Directions

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Arrange pita bread on a baking sheet and lightly toast in the oven.

  3. Cut pita bread into bite-size pieces and keep warm.

  4. Heat the olive oil in a skillet over medium heat.

  5. Stir in the chicken, onion, and garlic, and cook until chicken juices run clear.

  6. Mix in tomato puree.

  7. Season with cumin, salt and pepper.

  8. Continue cooking 10 minutes.

  9. Arrange pita pieces in a serving dish.

  10. Drizzle with butter and top with the chicken mixture.

  11. Garnish with yogurt and parsley to serve.
