Ingredients

  • Onion 1 (chopped)
  • Tomato 2 (chopped)
  • Chickpea 1cup (boiled)
  • Yogurt 2cups (whipped)
  • Potatoes 2–3 (boiled and cubes)
  • For Gol Gappy:
  • Semolina 1cup
  • Wheat flour 2cup
  • Oil to fry
  • For Date Chutney:
  • Dates 1cup
  • Tomato paste ½cup
  • Cumin 1tsp (roasted and crushed)
  • Oil 2tbsp
  • Brown sugar 2 – 3tbsp
  • Vinegar 2 – 3tbsp
  • Salt to taste
  • For Sour Water:
  • Tamarind pulp 1cup
  • Water 2 jugs
  • Citric acid 1tsp
  • Black salt 1tsp
  • Red chili powder 1 tbsp
  • Cumin powder 1 tbsp
  • Dry ginger powder 1 tbsp
  • Salt to taste
  • For Tamarind Chutney:
  • Black salt a pinch
  • Tamarind pulp 1 cup
  • Cumin 1tsp (roasted and crushed)
  • Dry ginger powder ½tsp
  • Jiggery 4tbsp
  • Salt to taste

Cooking Directions

  1. For Gol Gappy:

  2. In a bowl mix together wheat flour and semolina add lukewarm, oil, knead to hard dough with water.

  3. Wrap in wet muslin cloth and leave for few minutes.

  4. Now make balls and roll out with rolling pin.

  5. Cut into small circles/poori by using cutter.

  6. Now put it into hot oil and press from centre.

  7. Fry till its color turn to light golden.

  8. Poorian is ready.

  9. For Tamarind Chutney:

  10. Mix together black salt, tamarind pulp, cumin, dry ginger powder, jiggery and salt. Pour this mixture in a pan and cook for 5 – 7 minutes.

  11. Lastly add some black salt.

  12. For Sour Water:

  13. Boil 2 jugs water and add tamarind pulp, citric acid, black salt, red chili powder, cumin powder, dry ginger powder and salt.

  14. Cook for 10 minutes.

  15. Now strain it and leave it in clay pot to chill.

  16. Date chutney:

  17. Put oil in a pan and add dates, tomato paste, cumin, brown sugar, vinegar, oil and salt with 1 ½ cup of water and cook it till it become thick.

  18. For Serving:

  19. Now put gol gappay in a serving plate with 3 chutneys.

  20. Take another plate and put boiled potatoes and chick peas.

  21. Serve with yogurt, chopped onions and tomatoes.
