Ingredients

  • French beans 20-25
  • Tomatoes 3 medium
  • Skimmed milk yogurt 1 1/2 cups
  • Spring onion 3 medium
  • Maize flour 1 tablespoon
  • Oil 2 teaspoons
  • Ginger 1 inch knob
  • Garlic 5 cloves
  • Salt to taste
  • Whole dry red chillies 2

Cooking Directions

  1. Stiring French beans, wash them and then cut into three inch long pieces.

  2. Blanch in salted boiling water until cooked.

  3. Strain, (reserve the water to use as stock) refresh in cold water and then drain.

  4. Slit the cooked beans into two and tie them up in bundles with spring onion.

  5. Wash, trim & finely chop spring onion.

  6. Peel & wash ginger & garlic.

  7. Grind ginger and garlic to a fine paste.

  8. Crush dry whole red chillies.

  9. Beat skimmed milk yogurt with maize flour.

  10. Wash tomatoes, make a cross with knife and then blanch in boiling water for fifteen seconds.

  11. Remove peel, de-seed and then chop.

  12. Heat the oil in a non-stick pan, add spring onion and cook till translucent.

  13. Add ginger and garlic pastes.

  14. Stir for a moment. Add tomatoes and cook further for two to three minutes.

  15. Reduce heat & add skimmed milk yogurt & maize flour, mix well, add salt to taste & stir continuously.

  16. Warm the cooked bean bundles just before serving, in a microwave for one minute on HIGH or by briefly dipping them in boiling hot water or stock.

  17. Top with the prepared yogurt sauce.

  18. Sprinkle the crushed chilies and serve hot.
