Chicken Shashlik

Beat the yogurt, tomato paste, red chili powder, turmeric powder, salt, pepper, oil, cumin powder and pepper together until well mixed.

Add the ginger and garlic paste and mix well.

Add the chicken in the marinade along with lemon juice and coriander.

Coat well and leave to marinate for at least an hour.

Soak wooden skewers in cold water.

Thread chicken and vegetables onto the skewers and coat with remaining marinade.

Grill in the oven, on the griddle or on a coal grill till cooked and serve with fried rice.

For Fried Rice: In a wok heat oil add garlic then add carrot, cook for 1 minute.

Now add the capsicum and then add the chicken cube, cook for a minute.

Add the soya sauce and seasoning to taste, saute and add green onions and rice and toss well.

Move the rice to one side then add the beaten egg allow the egg to set and then scramble well and toss into the rice.

Mix well and season to taste.
