Bring a pot of salted water to a rolling boil and add soaked rice in it.
Then add nutmeg and mace and cook till rice is 3/4 cooked.
Drain in a strainer and keep aside.
Now heat 2 tbsp clarified butter in another pan and fry mutton in it for a while.
Now take out in a bowl.
Add green cardamom, black pepper, clove, cumin, all spice and ginger garlic paste in the same pan and cook on low heat.
Add coriander, bay leaf and red chili, cook well.
Now add meat and a little water. Cover and cook until meat is tender.
Add onion, yogurt, potato and ginger, cover it and cook till potatoes are tender.
Now spread a layer of boiled rice over the mutton and potato curry.
Then sprinkle onion, salt and yellow food color over it.
Repeat the layering step with the remaining ingredients.
Then add a little clarified butter on top.
Cover with a tight lid and cook on very low flame for 15 minutes.
Delicious korma biryani is ready.
Serve hot with raita.
