Combining tropical fruit with seafood or meat is very popular in the Caribbean. The sweet and tangy flavour of the pineapple and lime juice in this dish compliments the fish nicely.

Ingredients

  • For Fish:
  • Fish ½ kg (cubes)
  • Egg 1
  • Garlic paste 1 tbsp
  • Corn flour 2 tbsp
  • Flour 2 tbsp
  • Salt to taste
  • Black pepper ½ tsp
  • Oil 2 tbsp
  • Oil for fry
  • For Sauce:
  • Pine apple 1 cup (chopped)
  • Oil 3 tbsp
  • Ginger 1 piece (chopped)
  • Garlic cloves 2 (chopped)
  • Spring onion 1 (chopped)
  • Capsicum 1 (chopped)
  • Lime juice 4 tbsp
  • Tomato ketchup 2 tbsp
  • Worchester shire sauce 1 tbsp
  • Soya sauce 1 tbsp
  • Sugar 1 tsp
  • Chicken stock 1 cup
  • Salt to taste
  • Black pepper ¼ tsp
  • Corn flour 2 tbsp
  • Lemon skin ½ tsp

Cooking Directions

  1. In a pan mix together fish cubes, egg, garlic paste, corn flour, flour, salt, black pepper and oil.

  2. Now deep fry till golden brown, remove from pan and keep aside.

  3. For Sauce: In a wok heat oil, add ginger and garlic.

  4. Fry well till golden brown.

  5. Now add spring onion and capsicum. Cook for 2 – 3 minutes.

  6. Add in lime juice, tomato ketchup, Worchester shire sauce, soya sauce, sugar, chicken stock, salt, black pepper and pine apple.

  7. Cook for 2 – 3 minute.

  8. When it comes to a boil, add corn flour dissolved in 2 tbsp water.

  9. Cook till thickens, then add fried fish and lemon skin. Mix well.

  10. Serve with boiled rice.
