This is an easy vegetable curry to cook, and making it in a handi (claypot) will enhance the flavours different spices used making it a delightful dish to eat!

Ingredients

  • Oil 1/2 cup
  • Water 1 cup
  • Onion (sliced) 1
  • Carrot (cubes) 2
  • French beans 100 gram
  • Cauliflower 100 gram
  • Tomato (round slice) 4
  • Potato 3
  • Peas 1 cup
  • Fenugreek leaves 1 small bowl
  • Dill 3-4 tbsp
  • Salt 1- 1/2 tsp
  • Red chilli powder 1-1/2 tsp
  • Turmeric 1 tsp
  • Cumin powder 1- 1/2 tsp
  • Brinjal 2 medium
  • Green chilies 6

Cooking Directions

  1. Pour oil in Handi. Add water in it.

  2. Add onion, carrot, french beans, cauliflower, tomato, potato, peas, fenugreek leaves, dill, salt, red chilli powder, turmeric and cumin powder. Cook for 2-3 minutes.

  3. Add freshly cut brinjals. Cover with lid.

  4. Cook for 15 minutes.

  5. Add green chilies and serve
