Ingredients

  • Celery sticks 2
  • Capsicum 1
  • Medium onion 1
  • Boiled potato 1
  • Boiled peas 1/4 cup
  • Crushed black pepper 1/4 tsp
  • Lemon juice 1 tbsp
  • Cream cheese 2 tbsp
  • Parsley 1/4 bunch
  • Boiled eggs 6 (separated)
  • Large prawns 12
  • Salt as required

Cooking Directions

  1. In a food processor chop together celery sticks, capsicum and onion, boiled potato, peas, salt, crushed black pepper, lemon juice, cream cheese, parsley and 6 boiled egg yolks. Process the mixture in a food processor until a paste like mixture is formed.

  2. Slit about 3/4 of the way through the shrimp and boil in water for a few minutes.

  3. Fill the egg mixture in a piping bag and evenly pipe into the egg halves. With the help of a tooth pick, insert one boiled shrimp along with a sprig of parsley into each egg white half and serve.
