Nav Ratan Chutney is made of raw mangoes with mint, all spice, coconut, dry fruit, saffron and seasoning. Raw mangoes have a natural sour flavor, that's why no additional sour ingredients are added.

  • Peeled sliced raw mangoes (without seeds) 800 gm
  • Salt (lahori) 100 gm
  • Salt (sambhar) 150 gm
  • Coriander 30 gm
  • Cardamoms 2 tsp
  • Cloves 1 tsp
  • Mace 1 tsp
  • Mint 30 gm
  • Cinnamon 1 tsp
  • Ginger 60 gm
  • Almonds 60 gm
  • Grated coconut 20 gm
  • Blanched pistachios 20 gm
  • Dry dates 100 gm
  • Saffron 60 gm
  • Ghee 2 tsp
  • Sugar 1200 gm

Cooking Directions

  1. Grind the sliced mangoes to a thick paste and keep aside.

  2. Now grind together all the other ingredients except sugar, into a fine paste also and fry lightly in ghee.

  3. Make a syrup of sugar and when it is of two third consistency, add the ground mangoes and paste in it.

  4. Mix thoroughly. When the chutney cools down, store in airtight jars.
