Ingredients

  • For Lemon Syllabub:
  • Heavy cream 1 cup
  • Zest ½ lemon
  • Lemon juice 2 tbsp
  • Honey 4 tbsp
  • For Mango Puree:
  • Mangoes 3 large
  • Honey 4 tbsp
  • Lemon juice 1 tsp
  • Mint for garnishing

Cooking Directions

  1. For the Syllabub: Whisk the heavy cream until slightly thickened. Stir the lemon zest, lemon juice & honey, with a wooden spoon. Let sit for 2 to 3 minutes.

  2. For the Puree: Peel the mangoes. Cut two mangoes into slices and one finely chop.

  3. Blend two sliced mangoes into blender to puree.

  4. Add honey and lemon juice; blend until smooth. Pour puree in a bowl and stir with spoon ¾ of finely chopped mango in it.

  5. Spoon the purée mixture into the base of 6 glasses.

  6. Spoon whipped cream mixture on top of the mango purée.

  7. Garnish with the remaining chopped mango and a sprig of mint. Serve.
