  • Red seasonal carrots 1 kg
  • Milk 1 liter
  • Solidified whole milk (khoya/mawa) or condensed milk 1/2 cup
  • Sugar 5 tbsp or to taste
  • Clarified butter (ghee) 1/2 - 1 cup
  • Nuts and raisins as required

Cooking Directions

  1. Peel and grate the carrots.

  2. Put carrots and milk in a pan and bring to a boil.

  3. When milk comes to a boil reduce heat to low, cover and cook for 2 hours.

  4. Stir occasionally.

  5. Remove the lid and cook on medium heat till all the milk evaporates while stirring occasionally to keep it from sticking to the pan.

  6. Add in clarified butter and stir fry till fragrant and the color darkens. (Approximately 15 - 20 minutes)

  7. Add in sugar, raisins, solidified milk and nuts.

  8. Stir fry till sugar dissolves and rich aromatic fumes fill the space.

  9. Serve warm with cream.
