Check lentils for stones, place in sieve and wash under cold and running water.
Soak lentils in 200ml cold water for 8 hours or overnight.
Rinse and place in saucepan with 400ml boiling water, bring to boil, cover and simmer for 1/2 hour or until lentils are tender.
In pan melt 50 grams butter, add onions, chillies, garlic and fry for 7 minutes or until golden , stirring occasionally.
Add salt, turmeric, chilli powder, half of garam masala, lentils and remaining cooking water.
Mix well and add ginger.
Fry over medium heat for 5 minutes stirring occasionally then simmer for 10 minutes.
Put remaining butter on top and swirl milk on top.
Sprinkle garam masala, coriander and serve hot.

nowhere mentioned when to cook or in place of lentil, kidney beans can be
used. Kindly let me know how to use kidney beans.
