Zanzibar is a group of islands in the Indian Ocean situated off the coast of East Africa. The original Zanzibar Pilau is a rice dish seasoned with lots of spices and traditionally made with meat & potatoes. Thanks to chef Munawar for giving us such a nice recipe.

Ingredients

  • Whole fish 1/2 kg
  • Salt & pepper to taste
  • Ginger & garlic paste 1 tsp
  • Lemon juice 1.
  • Rice 1 cup.
  • Cumin seeds 1/4 tsp
  • Onion 1 medium.
  • Cinnamon stick 2
  • Oil 1/2 liter
  • For Chili garlic paste.
  • Whole red chili 1/4 cup.
  • Cumin seeds 1 tsp
  • Salt to taste.
  • Garlic cloves 3 to 4

Cooking Directions

  1. Take whole fish of your choice.

  2. Remove the scale & the dirt inside of the fish put cut mark on the top of the fish both sides.

  3. Marinate with salt & pepper, Ginger & garlic paste, lemon juice, leave it for rest for 10 minutes.

  4. Soak the rice for at least ½ hour, before making the pilaf.

  5. Take a medium size cooking pot, put on the fire , put some oil, let the oil get heated add onion sliced, stir for a couple of minutes add cinnamon stick’s, cumin seed’s, stir it for another couple of minutes

  6. Now add the soaked rice in it, stir gently add water as needed to cook the rice.

  7. Cook it till the water is dried . Remove it from the fire.

  8. Now take wok , put oil in it, let oil get hot

  9. Now fry the marinated fish in the hot oil at medium heat, fry it till the fish is golden brown color.

  10. Remove it from the oil.

  11. Serve it with hot pilaf rice & chili Garlic paste.

  12. Method for Chili garlic paste.

  13. Soak the red chili in to the water, so they get soft.

  14. Put the soaked red chili’s, cumin seed , garlic cloves & salt, grind them, till the texture is fine paste, add water time to time during grinding.

  15. Serve with Zanzibar fried fish & pilaf.
