  • Semolina (Sooji ) 1 ½ cup
  • Sugar 1 ½ cup
  • Cardamom 1 - 2
  • Saffron a pinch
  • Water 1 cup
  • Coconut 1 tbsp (grated)
  • Almonds 1 tbsp (finely sliced)
  • Pistachio 1 tbsp (finely sliced)
  • Clarified butter 2 tbsp.

Cooking Directions

  1. In a medium size pot heat clarified butter and fry cardamom for 2 minutes.

  2. Add semolina and stir constantly on low heat till its color turns pale gold and becomes fragrant.

  3. Add water, sugar, saffron and continue stirring till sugar dissolves.

  4. When the mixture thickens pour in a flat bottomed dish.

  5. Garnish almonds, coconut, pistachio and press gently in order to level it.

  6. Cut into diamond shape and serve.
