  • Raw mangoes 3
  • Cucumbers 2
  • Spring onions 2
  • Fresh basil leaves 6
  • Cabbage 250 grams
  • Grated coconut 1/2 cup
  • Coriander leaves 1/2 bunch
  • Peanuts 50 grams
  • Ingredients for dressing:
  • Soya sauce 6 tbsp
  • Lemon juice 3 tbsp
  • Chilli sauce 2 tbsp
  • Brown sugar 2 tbsp
  • Oyster sauce 2 tsp
  • Salt to taste

Cooking Directions

  1. Place coconut in a frying pan or wok (no oil required).

  2. "Dry-fry" the coconut as if you were stir-frying it 2-3 minutes over medium heat, or until it turns a light golden-brown and is fragrant. Transfer to a bowl to cool.

  3. Mix together all the salad dressing ingredients in a bowl or cup.

  4. Now peel skin from raw mangoes and cucumber then grated it.

  5. Roast peanuts ,set aside.

  6. Cut remaining vegetables then place in to fry pan. Toss well to combine.

  7. Now add the roasted coconut and dressing , toss again.

  8. Then place it in a bowl, mix grated raw mangoes and cucumber.

  9. Serve with roasted peanuts.

  10. Note: You can add sugar to your according to taste.
