  • Medium potatoes 4
  • Small brinjals 4
  • Cumin seeds 1 tsp
  • Onion seeds 1 tsp
  • Fenugreek seeds 1/2 tsp
  • Garlic cloves 4-6
  • Ginger (ground) 1" piece
  • Turmeric powder 1/2 tsp
  • Red chilli powder 1 tsp
  • Salt to taste
  • Oil as needed

Cooking Directions

  1. Fry the cumin seeds, onion and fenugreek seeds in a little oil, then grind them finely.

  2. Mix all the ingredients together.

  3. Slit the potatoes and brinjals, stuff them with this paste.

  4. Heat 8 tbsp oil in a vessel and put in the stuffed potatoes and brinjals, cook till they are tender and nicely browned.
