Suran Kootu - A vegetable dish made of yam and pigeon peas. Yam is a rich source of vitamins C and B6, potassium, manganese and dietary fiber. Yam protects against heart disease.

  • Yam 1/4 kg
  • Pigeon peas (Tur daal) 1 cup
  • Turmeric powder 1/4 tsp
  • Small lemon sized tamarind ball 1 (soaked in a little water)
  • Curry leaves 10
  • Coriander leaves 1/4 bunch
  • Salt to taste
  • Grind Together:
  • Coconut 1/2
  • Gram lentils (Chana daal) 1 tsp
  • Whole red chillies 10
  • Asafoetida 1/4 tsp
  • For Seasoning:
  • Mustard seeds 1/2 tsp
  • Black Gram (Urad daal) 1/2 tsp
  • Grated coconut 1 tsp
  • Oil for frying

Cooking Directions

  1. Cook pigeon peas till tender.

  2. Strain juice from tamarind.

  3. Cut yam into small cubes.

  4. Cook in tamarind juice with salt and turmeric powder.

  5. Grind the spices. Mix cooked yam and coconut spice.

  6. Cook till done and add in cooked pigeon peas.

  7. Heat oil in a pan.

  8. Fry the mustard seeds, black gram and the grated coconut.

  9. Pour over the yam bhaji.

  10. Add curry leaves and garnish with coriander leaves.
