Chargha Masala - This is no ordinary chicken chargah recipe. Chef Gulzar has prepared a special Gulzar spice for this recipe. Marinated chicken is steamed and then cooked in pan. Garnished chargah masala makes a very presentable dish.

  • Whole chicken 1, 1/2 Kg
  • Lemon juice 1/2 cup
  • Gulzar special spice 1 tbsp
  • Gram flour 1, 1/2 tsp (roasted)
  • Chaat spice 6 tbsp
  • Lemons 3
  • Lettuce 4 leaves
  • Oil for frying

Cooking Directions

  1. Mix lemon juice, Gulzar’s spice and gram flour in a bowl.

  2. Apply over chicken; wrap in plastic bag and set aside for 2 hours.

  3. Steam for 30 minutes in a steamer.

  4. Heat oil in wide-mouth pot and fry chicken till golden.

  5. Serve delicious Chargha Masala with chaat spice, lettuce and finely cut lemon.

  6. To prepare Gulzar special spice: Roast and grind Kashmiri chillies 125 grams, Red chillies (Rajasthani) 125 grams, Cumin seeds 100 grams, Long pepper 1 tbsp, Coriander seeds 4 tbsp, Cloves 6, Green cardamoms 10, Star anise 4 and Mace 1 tsp.

  7. Use as required.
