Ingredients

  • Chicken 1 (about 2 lb)
  • Almonds 3 tbsp
  • Meat 1 lb
  • Pistachios 3 tbsp
  • Ginger 1 1/2 inch piece
  • Onions 3
  • Garlic 1 pod
  • Cardamoms 8
  • Green chillies 4
  • Cloves 8
  • Tomatoes 2 lb
  • Cinnamon 6 sticks
  • Red chilli powder 4 tbsp or to taste
  • Milk 1/4 pint
  • Saffron 1/2 oz
  • Khoya (solidified milk) 1/2 lb
  • Mint leaves 1/2 bunch
  • Poppy seeds 2 tbsp
  • Coriander leaves 1/2 bunch
  • Chironji 2 tbsp (peeled melon seeds)
  • Ghee
  • Salt to taste

Cooking Directions

  1. Heat the ghee and fry the sliced onions till crisp and brown, remove and crush.

  2. Grind garlic, ginger and 2 green chillies to a paste. Heat ghee, fry 4 cardamoms, 4 cloves and 2 cinnamon sticks.

  3. Meanwhile slice the meat into 8 large pieces and coat with the spices paste.

  4. Leave it for a while in a cool place to let the spices soak in and then add it to the ghee.

  5. Next, add red chili powder and a ground paste of poppy seeds, chironji, almonds and pistachios and fry till brown.

  6. Add chicken, cut into 8 pieces.

  7. Make thick puree from the tomatoes and add when meat is a little tender.

  8. Cook for 15 minutes. When gravy is thick, add khoya blended with milk, saffron, powdered spices (4 cardamoms, 4 cloves, 4 cinnamon sticks), mint, coriander leaves and 2 green chillies.

  9. Put a weight on the saucepan lid and place on a low heat.

  10. Let it cook for 20-25 minutes.

  11. Remove and serve hot with Nan.
