  • For Base:
  • Flour 8 oz
  • Ginger 1 tsp (ground)
  • Caster sugar 3 oz
  • Butter 6 oz
  • For Topping:
  • Golden syrup 3 tsp
  • Butter 2 oz
  • Icing sugar 3 tbsp
  • Ginger 1 tsp (ground)

Cooking Directions

  1. Sift flour and ginger, stir in caster sugar, rub in butter until mixture is smooth.

  2. Press in a greased tin and smooth with a palette knife.

  3. Bake at 180 degrees C for 40 minutes, until lightly brown.

  4. For topping: Put syrup and butter in a pan and heat till melted, stir in icing sugar and ginger powder.

  5. Pour topping over base whilst both are still hot.

  6. Let it cool on wire rack and cut in fingers.
