One of the things that Multan, Pakistan is known for is it's Multani Sohan Halwa, a sticky, nutty and sweet halwa dessert that is rich and absolutely delicious. In this dessert Angoori or sumalaq is an important ingredient that you can get it (or request it) at your local food store. Ingredients

  • All purpose flour 150 gm
  • Clarified butter 1 kg + 4 tbsp
  • Sprouts wheat (Angoori/Samnak) 2 tbsp
  • Yogurt 1 tbsp (heaped)
  • Sugar 1 kg (750 ml)
  • Water 1 kg (750 ml)
  • Gram flour/Besan 1 tsp
  • Pistachio, Almonds 50 gm
  • Cashew nuts 50 gm
  • Cream of tartar 1 tbsp

Cooking Directions

  1. Take a deep pan, put all purpose flour and 4 tbsp clarified butter in it and beat well with the help of whisk.

  2. Soak sprouted wheat in 1 cup water for 15 minutes.

  3. Now add sprouted wheat, stir lightly allow it to mix properly.

  4. Add yogurt, mix well, till smooth mixture will be formed.

  5. Then add water in it and cook the mixture over low heat for half hour.

  6. Keep stirring slowly, otherwise lumps may form.

  7. Now let it boil then add sugar, cook for few minutes then remove from stove and cool.

  8. After half hour cook again on high flame.

  9. When mixture turn into thick form then cook on low heat with continue adding 1 tbsp clarified butter at a time and stirring for 20 minutes or till the mixture gets separated.

  10. When mixture turn into light brown then remove from stove and add gram flour and cream of tartar.

  11. Spread it in a dish evenly, garnish with pistachio, almonds and nuts. Let it cool then serve.

  12. Note: Make sure to use the quantities mentioned in the recipe, don't increase or decrease any ingredient amount, and just follow the tips-tricks.

  13. Angoori/samnak or sumalaq- are same thing, its prepared from wheat sprouts and its a long process like cultivating, planting etc. Its look like a flour and you can easily buy at you local food mart.

  4. Khushrow Mistry, plain is all purpose flour and maida. Cream or tartar/tartari is tartaric acid. Its a acid salt used in cooking. Point 7 is cleared for you now.

  5. thank you for your quick response on Angoori/sanmak. What is cream tatri and is plain flour alsocalled maida/all purpose flour? Your point 7 say remove from stove and strain. Strain what? Or do you mean remove from stove and cool. Will appreciate if you clarify.
