Wrap egg plant with aluminium foil and bake in oven for 10 minutes, till it tenders.
Allow the eggplant to cool, peel and mash.
Heat oil in a skillet fry onion, then add garlic, saute for few minutes
Add mashed eggplant, crushed red chili, cumin and salt.
Mix well and cook for 5 minutes.
Add lemon juice, green chilies and chopped coriander.
Lower a hot coal into the skillet and cover
The baingan ka bhurta is ready to serve.
Note: Egg plant can also be roasted over direct flame of gas burner
