Egg plant bhurta is mostly liked by the ladies at homes, they enjoy it as chutney at breakfast or lunch. It has a soothing taste, specially the lemon juice dominates all flavors.

Ingredients

  • Eggplant 2 - 4 medium
  • Yogurt 1 cup
  • Garlic 1 tbsp (chopped)
  • Crushed red chili 1/2 tsp
  • Roasted cumin powder 1 tsp
  • Green chilies 2
  • Lemon juice 2 tbsp
  • Onions 1 (chopped)
  • Salt to taste
  • Oil 2 tbsp
  • Coal 1

Cooking Directions

  1. Wrap egg plant with aluminium foil and bake in oven for 10 minutes, till it tenders.

  2. Allow the eggplant to cool, peel and mash.

  3. Heat oil in a skillet fry onion, then add garlic, saute for few minutes

  4. Add mashed eggplant, crushed red chili, cumin and salt.

  5. Mix well and cook for 5 minutes.

  6. Add lemon juice, green chilies and chopped coriander.

  7. Lower a hot coal into the skillet and cover

  8. The baingan ka bhurta is ready to serve.

  9. Note: Egg plant can also be roasted over direct flame of gas burner
