Spring comes with a variety of healthy vegetables. This is a very simple and easy recipe of spring vegetables like cauliflower, french beans and zucchini. The vegetables are boiled lightly and stir fried in butter with seasoning.

Ingredients

  • Cauliflower 1
  • French beans 1/4 kg
  • Zucchini 1/4 kg
  • Butter 2 tbsp
  • Garlic 1 clove
  • Red chilli powder 1 tsp
  • Parsley 2 tbsp
  • Salt to taste
  • Black pepper powder as required

Cooking Directions

  1. Separate flowers from cauliflower, cut zucchini into thick pieces and cut both ends of french beans.

  2. Boil cauliflower in a pot for few minutes.

  3. Take it out of water and set aside.

  4. Boil french beans in the same pot, when they are tender take them out of the pot and soak in cold water.

  5. Boil zucchini and wash with cold water.

  6. Heat butter in a frying pan.

  7. Add crushed garlic and red chilli powder and fry lightly.

  8. Put the 3 boiled vegetables along with black pepper powder and salt in the frying pan and mix well.

  9. Take the vegetables out in a dish.

  10. Garnish with finely sliced parsley and serve.
