Baked fish in banana leaves is marinated with coconut milk, lemon leaves, sugar and fish sauce etc. Fish is wrapped into banana leaves and baked. Try this very aromatic fish recipe and enjoy.

Ingredients

  • Fish fillet ½ kg
  • Coconut milk 1 cup
  • Red curry paste 2 tbsp
  • Sugar 1 tbsp
  • Fish sauce 3 tbsp
  • Lemon leaves 5
  • Banana leaves 4 – 5
  • Mixed vegetable 200 g
  • Red chilies 2 – 3 (sliced)

Cooking Directions

  1. In a mixing bowl combine together coconut milk, red curry paste, sugar, fish sauce and lemon leaves. Mix well.

  2. Marinate the fish fillet in the prepared marinade for 25 – 30 minutes

  3. Set the banana leaves on a baking tray.

  4. Add mixed vegetables and top with the marinated fish fillet.

  5. Pour the remaining marinade on top and bake at 200c for 20 – 25 minutes.

  6. You can either bake or steam the fish.

  7. Transfer the fish onto a serving platter.

  8. Garnish with sliced red chilies and serve.
