Deseed the oranges and extract the juice.
Place the juice and finely sliced peels (skin) of orange in a large bowl.
Add water and lemon juice and put aside overnight.
Boil in a pan and simmer the mixture until the peel is tender, in about half and hour or more.
Add sugar and bring back to a boil.
Stir and cook till it starts to set.
Now add citric acid and colour, stir and cook for two to three minutes more.
Take off heat, cool and pour in clean bottles and store.
