Ingredients

  • Butter 2 tbsp
  • Bread Crumbs 2 oz (preferably wholemeal)
  • Grated Rind and juice of lemon 2
  • Rosemary Dried 1/2 tsp
  • Fresh Parsley 2 tbsp
  • Pieces Of Beckti fish 4 (each 150 gm approx, cut in steaks)
  • Garlic 1 clove
  • Extra Virgin Olive oil 3 tbsp
  • Small Red Chilli finely chopped 1
  • Parmesan Cheese 3 tbsp
  • Walnuts 1 oz chopped roughly

Cooking Directions

  1. Melt butter in a frying pan .

  2. Remove pan from the heat and add the breadcrumbs, walnuts, lemon rind juice of 1 lemon ,half of the rosemary and fresh parsley.

  3. Mix well to combine

  4. Line a roasting dish with foil.

  5. Press the breadcrumb mixture over the fish steaks and place in the roasting pan.

  6. Bake in a preheated oven for 25 minutes at 200 C.

  7. Mix the garlic, the remaining lemon rind and juice, rosemary, parsley and chilli in a bowl.

  8. Beat in the olive oil and mix well to combine.

  9. Drizzle this mixture over the fish as soon as its cooked.

  10. Serve hot!
