  • For Sponge Cake:
  • Eggs 4
  • Caster sugar 1 cup
  • Flour 1 cup
  • Baking powder 1 tsp
  • Vanilla essence 1 tsp
  • For Butter Icing:
  • Butter 1 cup (unsalted)
  • Icing sugar 1 ½ cup
  • Vanilla essence ¼ tsp
  • Sugar syrup to moist cake
  • Pink color few drops

Cooking Directions

  1. Beat eggs, gradually add in sugar until light and fluffy.

  2. Add vanilla essence, sieve together flour and baking powder, carefully fold in the sieved flour.

  3. Pour in a greased 8 inch round tin, bake on 180 degree C for 25 minutes.

  4. Remove and cool on a wire rack.

  5. For Butter Icing: Beat butter add icing sugar and beat till double in volume.

  6. Add essence, divide the sponge cake in 3 layers, moist each layer of cake with sugar syrup.

  7. Spread with butter icing, do this with all the layers.

  8. Lastly cover whole cake with pink butter icing, put in the freezer till firm.

  9. Cover the sides of the cake with cake crumbs and decorate the top with pipe butter cream.
