This typically English tart proves very refreshing during the hot summer days. Baked crust is filled with freshly prepared lime filling, made of lime juice, lime rind, cream, egg yolks and gelatin.

  • For Pastry Dough:
  • Flour 200 gm
  • Salted soft butter 100 gm
  • Fine sugar 3 tbsp
  • Small egg 1
  • Cream 1 tbsp
  • For Filling:
  • Orange juice 200 ml
  • Sugar 150 gm
  • Butter 50 gm
  • Water 50 ml
  • Cornflour 4 tbsp
  • Egg yolks 2
  • Grated rind of 4 lime
  • Lime juice 50 ml
  • Gelatin 2 tsp
  • Cream 100 ml

Cooking Directions

  1. Grease a round pie dish, measuring about 23 cm in diameter, and dust with flour.

  2. Keep ready.

  3. Sift flour into a big bowl and rub butter into flour with fingers until mixture looks like breadcrumbs.

  4. Add sugar, beaten egg and cream. Mix well.

  5. Press dough into a ball, cover bowl with a damp cloth and refrigerate for about one hour.

  6. Roll dough on a flour-dusted surface into a round shape, large enough to fit into the pie dish and press edge firmly against the side of the dish with fingertips.

  7. Overlapping dough can be trimmed with the rolling pin.

  8. Prick the base with a fork several times, so that the steam can escape while baking.

  9. Preheat the oven! For blind-baking, cover the base with a foil and spread some beans or rice on it.

  10. Blind-bake in medium hot oven for 15 minutes and then remove the beans and foil and continue baking until brown and crusty.

  11. Cool pastry before making the filling.

  12. Filling: Mix sugar with orange juice and heat in a pan.

  13. Add butter and bring it to a boil.

  14. Mix cornflour in water and add to the orange syrup, stir.

  15. Add slightly beaten egg yolks while stirring and reduce heat.

  16. Now add lime rind and lime juice, stir.

  17. Bring it to the boiling point and remove from heat.

  18. Add gelatin and mix well, keep stirring preferably with an electric blender, until texture is smooth.

  19. Now add cream.

  20. Strain and cool slightly before spreading over the cooked pastry dough.

  21. Refrigerate until the filling has properly set and cooled off.

  22. Serve with cream.
