This is very tasty recipe of eggplants that you ever tried. Eggplants and tomatoes are roasted on stove. After removing skin they are mashed and mixed with chili, salt and lemon juice.

  • Eggplant 1
  • Onion 1 finely cut
  • Tomatoes 2
  • Whole red chilies 4
  • Lemon 1
  • Coriander 3 tbsp for garnishing
  • Salt to taste
  • Oil as required

Cooking Directions

  1. Roast eggplant and tomatoes over stove or in an oven, allow to cool.

  2. Remove skin and mash them in a bowl.

  3. Heat oil in a frying pan and fry onion till golden.

  4. Lightly roast whole red chillies on an iron griddle.

  5. Put onion, coriander and salt in mashed eggplant, squeeze lemon over it and mix thoroughly.

  6. Break roasted red chilies over eggplant, and garnish with coriander before serving.
