Ingredients

  • Potatoes 2
  • Brinjals 2
  • Parvals 3
  • Pumpkin pieces 1 cup
  • Spinach 1 bunch
  • Leeks 2
  • Cauliflower 3 pieces
  • Mustard oil 1/4 cup
  • Ground ginger 1/2 tsp
  • Coriander powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Red chillies 2
  • Salt to taste
  • Seasoning:
  • Red chillies and panch foron (mustard, onion seeds, 1-2 fenugreek, aniseed and cumin seed mixed in equal proportion)

Cooking Directions

  1. Cut all the vegetables in square pieces.

  2. In a pan, heat mustard oil and add red chilli pieces and panch foron.

  3. Add the vegetables and keep on stirring them till the color changes.

  4. Then add ground ginger, coriander, turmeric powder and red chillies according to taste.

  5. Keep on stirring and add salt.

  6. Sprinkle a little water, cover and cook until the vegetables are tender and water is absorbed.

  7. Serve with plain rice.
