  • Desiccated coconut 50 gms
  • pineapple 1 tin about 10 slices
  • For the base:
  • Butter 3 oz (softened at room temp)
  • Brown sugar 2 tbsps
  • Plain flour 1 ¼ cups
  • For the crumble:
  • Butter 3 oz (softened at room temp)
  • Brown sugar ¼ cup
  • White sugar ¼ cup granulated
  • Plain flour 1 ½ cup

Cooking Directions

  1. Preheat oven to 180.

  2. Knead butter, brown sugar and flour for the base until it forms firm dough.

  3. Cover it with cling and leave aside.

  4. Rub butter, granulated sugar and brown sugar together for the crumble, then gradually add flour until it looks similar to bread crumbs.

  5. Then add granulated sugar and mix together.

  6. Leave aside this mixture in a bowl.

  7. Take a baking dish the one you will be serving in and grease it slightly with some butter.

  8. Put the pastry mixture in serving dish and press it on in the dish to form a base.

  9. Chop pineapples in chunks.

  10. Layer the pineapple chunks over the pastry layer and then sprinkle the desiccated/flaked coconut on top.

  11. Sprinkle the crumble over the mixture.

  12. Then sprinkle some desiccated coconut on top of the crumble and place in the oven.

  13. Bake till golden brown.

  14. Serve warm with some cream or some vanilla ice cream.
