Brinjal, also known as eggplant, is a member of the nightshade family of vegetables. This recipe includes the simple ingredients eggplants, brown onion, mango pickle, tamarind pulp,being the main ones with a few others & some spices. A very flavourful recipe & extremely easy to cook in little time.

  • Brinjals ½ kg (Small round ones, give 4 cuts &leavethem whole)
  • Red chilli whole 8
  • Curry leaves 15
  • Oil ½ cup
  • White cumin whole 1 tsp
  • Onion seeds 1 tsp
  • Garlic paste 1 tsp
  • Salt 1 tsp
  • Coriander seeds 1 tbsp
  • Sugar 1 tbsp
  • Mango pickle with Masala 1 tbsp
  • Fennel seeds ½ tsp
  • Mustard seeds ½ tsp
  • Brown onion grinded 2 tbsp
  • Desiccated coconut 2 tbsp
  • Tamarind pulp 4 tbsp

Cooking Directions

  1. On a tawa dry roast together, coriander seeds, red chilli whole, desiccated coconut, white cumin, fennel seeds and onion seeds and grind together.

  2. Heat oil, add mustard seeds and curry leaves.

  3. Also add garlic paste with all dry roasted and grinded Masala.

  4. Fry well adding water, add brinjals with water and salt.

  5. Cover and cook till done about 15 minutes.

  6. Lastly add sugar, tamarind pulp and mango pickle.

  7. Simmer for 5 minutes, serve hot with chapati or boiled rice.
