Grind the masala ingredients finely. Wash and clean drumsticks. Peel the hard skin off and cut into 4 inch pieces.

  • Drumsticks or celery sticks 1 dozen
  • Tamarind water 1/2 pint
  • Coconut milk 1 pint
  • Coriander 1 tbsp chopped leaves
  • Onions 1 large
  • Turmeric powder 1/2 tsp
  • Garam masala 1/2 tsp
  • Jaggery 1 tsp
  • Salt to taste
  • Ghee 1 tbsp
  • For masala:
  • Cumin seeds 1/2 tsp
  • Dry red chilies 9
  • Cloves garlic 6
  • Ginger 1/2 inch piece
  • Grated coconut 1 tbsp

Cooking Directions

  1. Grind the masala ingredients finely.

  2. Wash and clean drumsticks.

  3. Peel the hard skin off and cut into 4 inch pieces.

  4. Now take 4 pieces and together with a bit of string or the peeled skin from the drumsticks.

  5. Continue till you have tied all into bundles.

  6. Boil in enough water until tender.

  7. Now heat ghee and fry the onion until nicely browned, add masala paste and fry.

  8. Then add the garam masala, jaggery, salt, tamarind and coconut milk.

  9. Bring to the boil, lower heat and cook for 15 minutes.

  10. Add drumsticks and simmer for 10 minutes.

  11. Serve with rice or dosai.
