  • Rice ½ cup (washed)
  • Salt a pinch
  • Water 4 cups
  • Hot water ½ cup
  • White granulated sugar ½ to 1 cup
  • Saffron ½ tsp (mixed in 1 tbsp hot water)
  • Rose water ¼ cup
  • Cinnamon stick 1 piece
  • Green cardamom 2 pods
  • Unsalted butter 2 tsp
  • Ground almond, ground pistachio for garnish

Cooking Directions

  1. Mix cardamom and rose water. Set aside.

  2. Add rice in a pan with water and boil then simmer on lowest heat for 30-40 minutes until rice are soft. Skim white foam from top of rice as it forms.

  3. Mix sugar in hot water until dissolved. Add this in rice and simmer for 10 minutes until dense. Stirring occasionally.

  4. Add saffron infused water and simmer more 10 minutes.

  5. Now add cardamom and rose water in rice along cinnamon stick and butter.

  6. Simmer it until pudding is completely dense. Discard cinnamon stick and cardamom pod.

  7. Pour in serving bowl; garnish with ground almonds and pistachio.
