Ingredients

  • Rice 2 cups
  • Sugar ½ cup
  • Milk solid 250 gm
  • Murabba 100 gm
  • Ghee 6 tbsp
  • Cinnamon Sticks 2 - 3
  • Cloves 4 - 5
  • Yellow Food Color Pinch
  • Kwera Essence few drop
  • Dry Fruit as required

Cooking Directions

  1. In a pan take water and sugar and make syrup.

  2. In another pan put ghee and heat it.

  3. Put cinnamon, and clove and when it starts smelling then add rice in it and water of the same volume.

  4. Close the lid.

  5. When the water starts drying then add sugar syrup in it and half milk solid followed by green and red murrabba and a few drops of kewra.

  6. Mix all the contents and cover the dish.

  7. When the water starts drying add yellow food color in it and leave to cook.

  8. Garnish it with milk solid, murrabba and your favorite dry fruits.

  1. Dear Govind, yes solid milk is khoya. You need to add fried nuts and soaked Munakka/ Kishmish at the end when you will give it dum or use as garnish.

  2. 1. What is Milk solid ? Is it Khoya / Mawa2. In a muslim friend's home Zarda served had lot of dry fruits, Cashew and Walnuts were lightly fried, whereas Munakka/ Kishmish were soaked in milk. My question is as to at what stage these are to be added.
