Stuffed Brinjal Rings - Fried brinjals are stuffed with a delicious filling coated and fried again. Delicious fried brinjal rings are served with a freshly prepared delicious tomato sauce. You can also coast the brinjal rings with a flour batter instead of breadcrumbs.

Ingredients

  • Large Brinjals (thickly sliced) 2
  • Oil for frying
  • Butter 2 tbsp
  • French Beans (minced) 50 gm
  • Carrots (minced) 100 gm
  • Button Mushrooms (minced) 300 gm
  • Potatoes (boiled, peeled and grated) 3
  • Paneer (grated) 100 gm
  • Salt to taste
  • Black Pepper powder to taste
  • Ginger (finely chopped) 2 tbsp
  • Garlic (finely chopped) 2 tbsp
  • Green Chillies (finely chopped) 1 tbsp
  • Onions (finely chopped) 2
  • Spring Onions (finely chopped) 4 stalks
  • Green Capsicum (finely chopped) 1
  • Red Capsicum (finely chopped) 1
  • Yellow Capsicum (finely chopped) 1
  • Large Tomatoes (grilled on a flame, peeled and finely chopped) 6
  • Tomato Puree 200 ml
  • White vinegar 1 tbsp
  • Carom seeds 1 tbsp
  • Red Chilli powder 1/2 tbsp
  • Cumin powder 1 tsp
  • Coriander powder 1 tsp
  • Eggs (beaten) 4
  • Breadcrumbs 8 tbsp
  • Fresh Coriander 6 sprigs

Cooking Directions

  1. Heat oil in a wok and deep fry sliced brinjal till golden and cooked.

  2. Remove, drain onto absorbent paper and cut out a circle in the middle of each slice. Keep aside.

  3. Heat 1 tbsp butter in a pan, add beans, carrots and mushrooms and sauté till done.

  4. Mix in potatoes and paneer and season with salt and pepper.

  5. Stuff into prepared brinjal rings and keep aside.

  6. Heat remaining butter and add ginger, garlic and green chillies.

  7. Sauté for a few seconds then add onions and spring onions and sauté till translucent.

  8. Mix in all three capsicums, grilled tomato and tomato puree and cook till done.

  9. Add white vinegar, carom seeds, red chilli powder, cumin-coriander powder and cook for 5 more minutes. Keep simmering.

  10. Heat oil in the wok again.

  11. Dip stuffed brinjal rings in beaten egg, coat with breadcrumbs and deep-fry till crisp. (you can also coat the brinjal rings in a flour batter instead of breadcrumbs, if you like)

  12. Remove and drain on absorbent paper.

  13. To serve, arrange fried brinjal rings on a plate and spoon tomato mixture on each ring.

  14. Garnish with coriander sprigs and serve hot.
