Kurhi is a traditional curry made of yogurt and gram flour with spices. A curry is first prepared with yogurt and gram flour, then gram flour fried dumplings (pakora) are added to it, then it is tempered with ghee and enjoyed with flat bread.

  • Yogurt 1/2 kg
  • Ginger/garlic paste 2 tsp
  • White cumin 1 tsp
  • Curry leaves 8
  • Red chilli powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Soda bicarbonate 2 pinches
  • Whole coriander 1 tsp
  • Cumin powder 1 tsp
  • Coriander leaves (chopped) 1/4 bunch
  • Salt to taste
  • Oil as required
  • Onion (chopped) 1
  • Gram flour 1 cup

Cooking Directions

  1. Blend yogurt and 4 tbsp gram flour in a blender.

  2. Heat oil in a pot and fry ginger/garlic paste in it till it turns golden.

  3. Add cumin powder and fry some more.

  4. When the spices turns red, add curry leaves, red chilli powder and turmeric powder and fry.

  5. When it comes to a boil, add the gram flour mixture.

  6. Lower the flame and add water to the pot.

  7. Whisk the mixture and then increase the flame.

  8. Keep stirring till it comes to a boil.

  9. Then lower the flame and let it cook.

  10. Put 1 cup gram flour, soda bicarbonate, salt, finely sliced onion, cumin seeds powder, coriander seeds and finely chopped coriander leaves in a bowl to make a thick mixture.

  11. Heat oil in a wok and put medium spoonful of gram flour mixture in the wok to make pakoras.

  12. When they turn golden, take them out and keep them on a piece of absorbent paper.

  13. When oil from the pakoras absorbs in the paper, immerse them in warm water.

  14. After a few minutes, squeeze out the water from the pakoras and put them in karhi.

  15. Heat oil in a frying pan, add red chillies to temper the karhi, and serve.
