How one can forget to make biryani on Eid day. An exotic dish loved by all. But, many people hesitate to make biryani because of lengthy procedure. Here is the recipe which one can easily prepare on Eid day. Simply marinating the chicken a day before It will help you to enjoy Biryani on Eid Day with much richer taste.

  • Chicken, beef or mutton 450 gms
  • Basmati rice 1/2 kg
  • Onions 3 (sliced)
  • Ginger garlic paste 2 tbsp
  • Green chilies 6 (medium)
  • Yogurt 1 cup
  • Black pepper 8 (whole)
  • Cloves 6
  • Cumin 1 tbsp (crushed)
  • Coriander seeds 1 tbsp (crushed)
  • Green cardamoms 4
  • Black cardamoms 2
  • Cinnamon sticks 2-3
  • Few bay leaves
  • Dry plums 1/2 cup
  • Red chili flakes 1 tbsp
  • Turmeric powder 1 tsp
  • Salt to taste
  • Almonds 20
  • Pistachios 10
  • Orange food color 1/2 tsp
  • Biryani essence few drops
  • Mint leaves 1/2 bunch
  • Fresh coriander 1/2 bunch
  • Cream 3 tbsp
  • Milk 1/2 cup
  • Clarified butter/oil 1 cup
  • Silver foil (if desired) for decoration

Cooking Directions

  1. Marinate meat with yogurt, ginger garlic paste, whole black pepper, cloves, black and green cardamoms, cinnamon sticks, bay leaves and red chili flakes.

  2. Now add turmeric powder, salt (according to meat only) crushed coriander and cumin for an hour and if you want to keep it 24 hours you can. (Add meat tenderizer if using beef 1/4 teaspoon).

  3. Heat clarified butter/oil in a big pan and fry onions till brown.

  4. Add marinated chicken and cook on medium flame for ten minutes.

  5. Add 1 glass of water and cook for 15 minutes on low flame.

  6. Do not dry out all the water from chicken.

  7. Boil water for rice, add salt and 3 green chilies, add rice and cook until half done and drain them out.

  8. In other pan heat 1 tablespoon clarified butter and roast all the nuts in it till they change their color in light golden. Remove them from heat.

  9. Mix food color in milk.

  10. In chicken gravy pan add cream here and there do not mix. Add dry plums too.

  11. Add almost half of the rice, then add roasted nut (keep some for garnishing), add mint and coriander leaves.

  12. Add remaining rice, pour milk with food color add biryani essence.

  13. Cover the pan in such a way no steam comes out.

  14. First increase the heat for 1 minute and when steam forms then lower the heat and put the biryani on steam for 10-15 minutes.

  15. Dish out and garnish with rest of the roasted nuts and silver foil.

  16. Eid biryani is ready to serve with raita and salad.
