  • Sugar 3 cup (granulated)
  • Corn syrup 1 ¼ cup (light)
  • Salt ¼ tsp
  • Vanilla extract 2 tsp
  • Gelatin 4 ½ tbsp (unflavored )
  • Confectioners' sugar 1 ½ cups
  • Water as required
  • Oil for brushing

Cooking Directions

  1. Brush a 9x13 inches baking tray with oil.

  2. Line the baking tray with parchment, keeping 2-inch overhang on the long sides.

  3. Brush parchment with oil; set aside.

  4. Add granulated sugar, corn syrup, salt and ¾ cup water in a sauce pan. Allow boiling until sugar dissolve.

  5. Then cook without stirring, until mixture registers 238 degrees on a candy thermometer, about 9 minutes.

  6. Add ¾ cup cold water and gelatin in a bowl and let soften for 5 minutes.

  7. Add hot sugar syrup into gelatin and mix with electric mixture from low to high speed until mixture stiff about 10 minutes. Beat in vanilla extract.

  8. Pour mixture into greased dish, smooth top surface with spatula.

  9. Keep aside uncovered until set about 3 hours.

  10. Shift confectioners' sugar on flat surface.

  11. Unmold marshmallow onto confectioners' sugar; remove parchment.

  12. Lightly brush a sharp knife with oil and cut marshmallow into 2-inch squares.

  13. Put remaining ½ cup confectioners' sugar into a small bowl and coat each marshmallow in the sugar.

  14. Marshmallows can be stored in an airtight container up to 3 days.

  15. Note: Do not store in the fridge as they will melt. Store in an airtight container at room temperature.
