Tofu is made from curdling of soybeans. It is high in protein and calcium and well known for its ability to absorb new flavors through spices and marinades. Tofu curry with green beans has high nutritional value and coconut milk gives a very soothing aroma.

  • Tofu (bean curd) 2 cups (cubed)
  • Coconut milk 1 cup
  • Green beans 1 bunch (Cut into 1 inch piece)
  • Fresh red chilies 6 – 7 (dried and boiled)
  • Crushed red chili (garnish)
  • Brown sugar 1 tsp
  • Coriander leaves 1 tsp (chopped)
  • Garlic paste 1 tbsp
  • Lemon juice 1 tbsp
  • Basil ½ tsp
  • Fish sauce 2 tbsp
  • Oil 3 tbsp
  • Salt to taste

Cooking Directions

  1. In a saucepan boil 2 cups of water and blanch green beans for 5 - 7 minutes, then drain.

  2. In a blender, blend together the boiled and dried chilies with a little water to form a paste.

  3. Heat oil in a wok and add garlic paste, fry for few minutes.

  4. Lower the flame and while stirring add coconut milk, salt, fish sauce, brown sugar, red chili paste and basil, cook for some times.

  5. Then add green beans, tofu and lemon juice, mix properly.

  6. Garnish with chopped coriander and crushed red chilies.
