Buddha’s Delight is one of the oldest and popular vegetables and chicken dish in Chinese and Buddhist cuisine. This dish is mostly served on the first day of Chinese New Year. It goes great with boiled rice.

Ingredients

  • Chicken (Cubed) 500 g
  • Salt ½ tsp
  • Black pepper ½ tsp
  • Soy sauce 1 tbsp
  • Flour 2 tbsp
  • Corn Flour 2 tbsp
  • Egg 1
  • Oil for fry
  • Ingredients for Vegetables:
  • Oil 4 tbsp
  • Ginger 1 inch (sliced)
  • Garlic 1 tbsp (chopped)
  • Mushrooms 4 (sliced)
  • Sweet corn ½ cup
  • Whole red chilies 6
  • Capsicum 1 (julienned)
  • Carrot ½ cup (julienned)
  • Cabbage 1 cup (julienned)
  • Sugar 1 tbsp
  • Vinegar 1 tbsp
  • Soy sauce 1 tbsp
  • Salt ½ tsp
  • Pepper ½ tsp
  • Water ½ cup
  • Corn flour 1 tbsp (mix in 2 tbsp water)

Cooking Directions

  1. Marinate chicken with salt, pepper, soy sauce, flour, corn flour and egg for 15 minutes.

  2. Then deep fry the chicken and keep aside.

  3. Heat the oil, sauté ginger and garlic in it for 1 minute.

  4. Add in mushrooms, sweet corn, whole red chilies, capsicum, carrot and cabbage.

  5. Stir in sugar, vinegar, soya sauce, salt, pepper, water and fried chicken. Cook about 2 minutes.

  6. Finally add in corn flour to thicken the sauce and serve.
