Heat water in a pan and add some oil in it.
Add the glaas noodles and boil for 8 – 9 minutes.
Strain the noodles and run over with cold water.
In a separate pan add oil with onions, when they become transparent add the ginger paste and garlic paste.
Then add the chicken and carrots.
Keep stirring constantly, and add the salt, soy sauce, rice vinegar and red chilli flakes.
Add the mushrooms, capsicum and the green onions.
Take off heat and combine with noodles.
Serve hot or cold.
