  • For Gulab Jamuns:
  • Cream Milk powder 1, 1/4 cups full
  • Self-raising flour 1/2 cup
  • Bicarbonate of soda 3/4 tsp
  • Cream cheese 125 gm
  • Milk 1/3 cup, approximately extra milk
  • Ghee 375 gm
  • Oil for deep-frying
  • For Syrup:
  • Water 2 liters (8 cups)
  • Sugar 4 cups (1 kg)
  • Cardamom seeds 1/2 tsp
  • Rosewater 1 tbsp

Cooking Directions

  1. For Syrup:

  2. Combine water and sugar in large saucepan.

  3. Stir over heat, without boiling until sugar is dissolved.

  4. Stir in cardamom seeds, bring to boil.

  5. Uncovered, without stirring for 10 minutes.(syrup should not change color)

  6. Cool syrup slightly, strain into large bowl

  7. Add rosewater, cool.

  8. For Gulab Jamuns:

  9. Combine milk powder, sifted flour and soda in medium bowl.

  10. Mix in cheese with hands until mixture resembles fine breadcrumbs.

  11. Using hand, knead mixture in bowl.

  12. Gradually adding enough milk until mixture holds its own shape and is slightly sticky to touch.

  13. Moisten hands with extra milk.

  14. Roll level tbsp of mixture into 30 sausage shapes.

  15. Melt ghee with enough oil to make depth of 5 cm in medium saucepan.

  16. Deep-fry 8 puffs at a time for about 5 minutes or until golden brown and cooked through.

  17. Stirring occasionally.

  18. take out and drain on absorbent paper.

  19. Prick puffs well with toothpick.

  20. Move them to syrup and cover.

  21. Serve warm or cold.
