  • French bread 4 pieces
  • Butter 3 tbsp
  • Garlic clove 2 - 3
  • Olive oil 4 tbsp
  • Onion 1 (chopped)
  • Spring onion 2 (chopped)
  • Eggplant 1
  • Tomato 5 (chopped)
  • Vinegar 3 tbsp
  • Sugar 1 tbsp
  • Black pepper to taste
  • Black olives 12
  • Salt to taste

Cooking Directions

  1. For Garlic Bread: Mix butter, garlic and parsley in a bowl.

  2. Now apply prepared mixture on bread slices on both sides and fry for a while.

  3. For Caponata: Heat olive oil in a pan and sauté onions and spring onions.

  4. Then add eggplant and cook for 10 minutes.

  5. Then add tomatoes, garlic, vinegar, sugar and black pepper and cook well.

  6. Finally add olives and salt.

  7. Take out dish in platter, garnish with parsley and serve.
