Ingredients

  • Chicken 1 kg (2 lb)
  • Cardamom 2
  • Cinnamon sticks 2
  • Cloves 3
  • Peppercorns 6
  • Nutmeg 1/2 tsp
  • Mace 1/4 tsp
  • Ginger 2 tsp (ground)
  • Sugar 1 tbsp
  • Yogurt 1 cup
  • Cooking oil 1/3 cup
  • Salt to taste

Cooking Directions

  1. Roast the cardamoms, cinnamon, cloves, peppercorns, nutmeg and mace very lightly over low heat and grind.

  2. Make four pieces of chicken. Apply all ingredients with the chicken and let it stand for 5-6 hours.

  3. Prepare charcoal heat.

  4. Thread chicken piece with a skewer.

  5. Broil over charcoal heat for 20-25 minutes turning the chicken pieces once or twice and basting it with the marinade.

  6. Broil until the meat is tender.

  7. Serve with paratha or naan roti and salad.
