Ingredients

  • For Chicken:
  • Coconut milk ½ cup
  • Honey 3 tsp
  • Garlic 2 cloves (minced)
  • Soy sauce 2 tsp
  • Lime juice 2 tsp
  • Sesame oil 2 tsp
  • Ground coriander 1 tsp
  • Turmeric ½ tsp
  • Cumin ½ tsp
  • Cinnamon ¼ tsp
  • Minced ginger 1 tsp
  • Salt ½ tsp
  • Chicken breasts 750g (thinly sliced lengthwise for skewering)
  • For Salad:
  • Zucchini 2 medium (julienned)
  • Carrots 2 medium (julienned)
  • Red cabbage 1 cup (thinly sliced)
  • Bean sprouts 1 cup
  • Red pepper 1 (thinly sliced)
  • Cucumber 1 (thinly sliced)
  • Spring onions 3 (finely sliced)
  • Coriander leaves 1 handful (chopped)
  • For Dressing:
  • Garlic cloves 2 (minced)
  • Organic sugar-free peanut butter ½ cup
  • Soy sauce ¼ cup
  • Water ¼ cup
  • Lime juice ¼ cup
  • Toasted sesame oil 1 tbsp
  • Minced ginger 2 tsp

Cooking Directions

  1. For Chicken: Mix together chicken ingredients in a bowl and leave for 4 hours in refrigerator.

  2. Soak skewers in water for 15 minutes.

  3. Take out chicken from refrigerator and thread on skewers.

  4. Grill skewers on the barbecue or broil/grill them in the oven for about 7 minutes until cooked through.

  5. For Salad: Put all vegetables in bowl and toss.

  6. For Dressing: Mix dressing ingredients in a bowl and then pour little bit dressing over vegetables and toss.

  7. Mound salad onto a serving platter. Place cooked skewers on top or side of salad and serve with remaining dressing.
